Low-Carb Sweet Potato Toast with Four Toppings

Sweet potato toast is a colorful alternative to conventional toast. Thick slices of sweet potato are cooked until tender and lightly browned, then finished with sweet or savory toppings to suit your mood.

How to Make Sweet Potato Toast

  1. Wash and dry a sweet potato. Peel it if preferred.
  2. Cut it lengthwise into even slices about 6–10 mm thick.
  3. Arrange the slices on a baking sheet and bake at 200°C until tender and browned around the edges, turning once. Cooking time varies with thickness.
  4. Add your chosen toppings and serve while warm.

The slices can also be cooked in a toaster over several cycles, provided the appliance can safely accommodate them. Baking gives more consistent results.

Four Topping Ideas

Avocado and Egg

Top the sweet potato with mashed avocado, a boiled or fried egg, salt, pepper, and a pinch of chili flakes.

Tomato, Feta, and Herbs

Add sliced tomatoes, crumbled feta, and fresh basil or parsley. Finish with black pepper and a small drizzle of olive oil.

Yogurt and Berries

Spoon on thick natural yogurt, then add fresh berries and chopped nuts or seeds. A little cinnamon complements the natural sweetness.

Peanut Butter and Banana

Spread with unsweetened peanut butter and top with banana slices. Sprinkle with cinnamon or crushed nuts if desired.

Useful Tips

  • Choose a broad, evenly shaped sweet potato to produce toast-sized slices.
  • Keep the slices similar in thickness so they cook evenly.
  • Cook until tender but still firm enough to hold the toppings.
  • For a savory version, season the slices before baking; for sweet toppings, leave them plain.
  • Prepare the toppings while the sweet potato cooks and assemble just before serving.
